
Meet Piranha Mañana Coffee Lab
Piranha Mañana Coffee Lab was started in 2024 by Taylor Palmer, a teacher, traveller, and lifelong coffee enthusiast who fell in love with the art of pour-over coffee while exploring the world.
Over the years, Taylor has sipped and studied coffee everywhere from Paris to Porto, Austin, Phoenix, and Seville, learning how different regions, farms, and roasting styles shape the flavours in each cup.
One thing stood out to him: while Winnipeg had plenty of cafés, it didn’t have a space fully dedicated to pour-over or to helping people really taste what coffee can be.
So he created one.
Why Pour-Over?
We believe pour-over is the best brewing method — a way of slowing down and experiencing coffee in its purest form. Unlike automatic machines or quick-brew methods, pour-over gives you control over every step: the grind, the water temperature, the pour. That control lets the coffee speak for itself.
Just like wine, pour-over brings out the subtleties that make each coffee unique. The terroir, the processing method, the roast, all of it shows up more clearly in a pour-over than in any other brew. With the right guidance, anyone can start to taste the difference between an Ethiopian natural with its fruity, floral notes, a Colombian washed with its bright acidity, or a Guatemalan coffee known for its balance of chocolate and citrus.
Pour-over coffee means paying attention, noticing the details, and appreciating the work that farmers and roasters put into every bean. It’s the best way to discover new flavours, expand your palate, and learn to love coffee on a deeper level.




What We Do

Monthly Coffee Workshops
Join us on the last Saturday of every month for a two-hour workshop that’s open to the public. Each session is a little different — one month might focus on a specific origin, like Ethiopian naturals or Colombian washed coffees, while another might take a broader look at brewing methods and flavour profiles. The goal is always the same: to help people taste coffee in new ways, compare different beans side by side, and learn a bit more about how geography, farming, and roasting shape what ends up in your cup.

Private Coffee Tastings
For smaller groups, we offer private tastings that can be tailored to your interests. We can bring the experience to your home or host it in our downtown space. Whether you’re a beginner who just wants to learn the basics of pour-over, or someone who already brews at home and wants to go deeper, each session is customized to what you and your group want to explore. These tastings work well for friends looking for a unique activity, bachelorette parties, or small work outings that mix learning with a social, relaxed vibe.

Mobile Coffee Cart
The mobile cart is our way of bringing pour-over to events around Winnipeg. It’s ideal for weddings, bridal showers, smaller community events, or company BBQs. Depending on the setup, we can charge guests per cup or provide a flat-rate service where we makes as many coffees as needed for your group. The cart is designed for quality over speed, so each pour-over takes a few minutes, but the end result is a coffee that feels thoughtful and special.

Pour-Over Brewing Equipment and Coffee Beans

Each month, we curate a small selection of brewing equipment and partner with roasters around the world to bring in unique coffees that aren’t typically available in Winnipeg.
